Drossia is one of those cross-roads formerTurkish villages on the old Rethymno-Heraklion road. Once powerful as an Ottoman administrative post, it is now famous for the best spit-roasted suckling pig on the island. The little beasts are grown organically around the village and are melt-in-your-mouth succulent with crackling skins. Simple accompaniments are oven potatoes, horta and wild green salad. Enjoy it on the veranda or inside the quaint tavern in colder weather.
