ZUCCHINI & GRAVIERA MUFFINS-FROM MEET & EAT

Ingredients:
oil for greasing muffin tin
225 g self-raising flour
100 g zucchini, grated
100 g graviera cheese, grated
1 tbsp. fresh rosemary, finely chopped
1 tsp. oregano
175 ml full fat milk
1 egg, beaten
75 ml olive oil

Cooking process:
1. Heat oven to 180. Grease 10 muffin moulds or line with muffin papers. Sift the flour in a bowl and add the grated zucchini, cheese, chopped rosemary, oregano and salt & pepper.
2. In another bowl, mix together the milk, egg and oil. Carefully stir this into the dry ingredients.
3. Divide the mixture between the muffin moulds and bake for about 20 minutes, or until well risen and golden brown.
