WATERMELON FETA SALAD-FROM MEET & EAT

Ingredients:
1 small watermelon (about 2.5 kg)
1 sweet onion
2 cucumbers
1/4 cup sherry or cider vinegar
salt and pepper
1-2 tbsp honey
1/2 extra virgin olive oil
2 tbsp chopped fresh mint
120 g feta cheese, crumbled

Cooking process:
1. Cut the flesh from the melon and cut into bite-size pieces, discarding the seeds. Peel and slice the onion into rings. Peel the cucumbers and cut into same size pieces as the watermelon.
2. In a small bowl, combine the vinegar, s&p and honey and whisk well. Slowly whisk in the olive oil a bit at a time. Add the chopped mint, taste and adjust seasoning.
3. In a large bowl, combine the melon, cucumbers, onion and feta. Pour the dressing over and toss gently to coat. Garnish with mint sprigs. Serves 6.
