MANGO GAZPACHO-FROM ANN in CANADA

Ingredients:
2 C (about 2 large) Mangoes, 1/2 cm dice
2 C orange juice (fresh if possible)
2 tbsp extra virgin olive oil
1 seedless cucumber, 1/2 cm dice
1 red pepper, diced
2 cloves garlic, minced
1 good sized piece of fresh ginger, grated
1 small jalapeno pepper, deseeded, finely chopped
2 tbsp chopped fresh parsley, cilantro or basil
S&P to taste

Cooking process:
Process mangoes, olive oil and orange juice in blender till well puréed. Transfer to a bowl and add the rest of the ingredients. Season. Refrigerate until ready to serve. Best if refrigerated several hours before serving to allow flavors to mix. Serve with a dollop of Greek yoghurt.
